Fresh California Fruit Salad
Ingredients:
1/4 cup | Chopped kiwi fruit |
1 cup | Sectioned oranges |
1/4 cup | Orange juice |
1 cup | Seedless grapes |
2 cups | Blueberries |
⅓ cup | Fresh lemon juice and zest |
1 cup | Cubed cantaloupe |
1 cup | Sliced apples |
2 cups | Strawberries |
Optional: ⅓ cup of brown sugar for sauce.
Optional: 1 teaspoon of vanilla extract
Instructions:
- Bring orange juice, lemon juice, brown sugar (if desired), orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat. If desired, stir in vanilla extract (if desired). Set aside to cool.
2. Layer the fruit in a large bowl as desired. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.
